Parés Baltà, Blanc de Pacs 2021

A family owned winery dating back to 1790, Parés Baltà now owns five estates across the Penedès mountains. The variety of the soils and elevation create unique microclimates that give a special personality to their wines. Organic viticulture is at the heart of the operation, with the team at Parés Baltà even using its own flock of sheep to fertilise the vineyard and bees for pollination during the flowering season - how good. Blanc de Pacs 2021 is made from a blend of Xarel-lo, Parrallada and Macabeau (Viura); the grapes were hand-harvested and fermented separately before blending. Clean, bright and intense; it has a nose of white peach, green apple and blossom, which moves to a tangy palate with smooth texture and nice clean, ever-so-salty, mineral finish. A great wine to pair with shellfish.
